Jinny Rye’s Cheesecake
- Set oven at 375 degrees.
Beat for 20 minutes at high speed in a large bowl:
4 eggs
¾ cup sugar
Make into fine crumbs:
1 box Nabisco zwieback
¼ teaspoon cinnamon
¼ cup sugar
¼ lb butter
Add to egg and sugar mixture:
4 8-ounce packages cream cheese
½ teaspoon salt
1 Tablespoon fresh lemon juice
Pat ¾ of crunch mixture in the bottom of a spring form
pan and up the sides about ½ inch. Beat eggs, sugar and
cheese mixture until smooth, about 5 minutes. Pour into
pan and bake at 375 for 35 minutes.
Mix:
1 pint sour cream
4 Tablespoons sugar
1 teaspoon vanilla
Spoon carefully on top of hot cake. Increase temperature
of oven to 475 degrees and put in for 10 minutes. When
cool, refrigerate until time to serve. Serves 14.
Dave’s Caesar Salad
Dressing
- 2 cloves of garlic, minced
Juice of 1/2 lemon
1 Tablespoon wine vinegar
3 Tablespoons olive oil
2 dashes Worcestershire sauce
few drops Tabasco sauce
1 teaspoon Dijon mustard
1 egg yolk
Handful parmesan cheese
1 squirt anchovy paste
Croutons to taste
Whisk dressing together. Pour over romaine lettuce torn
into bite-size pieces.
Kay’s Molasses Crumbles
- 3/4 cup Crisco
1 cup brown sugar (packed)
Mix well and add
1 egg
1/4 cup baking molasses
Mix following ingredients separately then add to above:
1/4 tsp salt
2 teaspoons baking soda
1/2 teaspoons ground cloves
1 teaspoon cinnamon
1/4 teaspoon ginger
2 1/4 cup sifted flour
Shape into one-inch balls, roll in granulated sugar.
Bake at 375 degrees for 12 minutes.
Makes 33 cookies
